Sauerkraut With Scouts

When I first became a scout leader a few years ago, I was helping to run beavers. They are the younger scouts, and one night I ran a night where we were to make sauerkraut, it was fun but it was too much for most of them.

Now I'm with the scouts I thought it was time to try again. I ran a fermented food evening on Monday night with them and they all seemed to enjoy it (well as much as some teenagers will show you they enjoy anything).

It was a simple evening really, we made sauerkraut and fermented carrot sticks. I started the night off with a short talk about fermented food, why we do it, how long its been done for and what the benefits are. We also talked about food safety, washing hands, and the safe use of knives.

Then I gave them some simple instructions and they started to make some fermented food. We did everything pretty simple, just 2% salt, so it was interesting seeing their maths in action (or not as well).

I have sent an email home as well to talk about the safety of the food and how to make sure none of the jars explode. We did add some flavouring, with caraway seeds in some jars, or sliced up garlic.

I'm really hopeful that some of them will try eating it. A few were even snacking on the raw cabbage leaves at the end! So maybe it will give some of them a taste for it, if not now then maybe they'll think back on it in later life and give it a go.

Anyone else fermenting food at the moment (doesn't have to be with 20 teenagers)?

  1. Yes, I'm doing fermenting, I started off with carrots but for a long time I didn't really like the sound of sauerkraut, so didn't do it. Then one day I thought, oh what the heck, I'll give it a go. Now I can't live without the stuff and much prefer it to the carrots. A cheese and sauerkraut sandwich is to die for! I also make Kefir and water kefir.

    1. I had a water kefir goign for ages, but killed it. Tried again a few years later and it was nowhere near as nice. I should try again really.

  2. I assume that is a watch and band on the wrist of the subject in the top photo. I've never seen one quite like that.

Fermenting is one of those things I haven't done successfully yet and have only tried a couple times over the years. I really lack a cool dark storage space. We do purchase some fermented foods to eat with our meals though.

    1. I'm not sure. It's a parent that comes to help quite often, I could ask him for you.

I use the fridge once it's fermented. I also lack a cellar or something like it.

  3. I haven't done fermenting for years...the last was Kvass in 2017..apart from yoghurt that is.

My blog feed has suddenly started filling with posts from some older blogs, including some of your Megan blogs!

    1. I never got on board with kvass, I tried a few and couldn't get into them.
the classic blogs should make a come back. I'm trying to keep off twitter, but I'm glad I've kept this old thing running all these years.
