Is it down to the soil acidity where they grow Kev?
Maybe? a few people mentioned about when you cook it and add vinegar. I'm not sure!
Germans call it blue cabbage (have you seen the colour of that water when you steam or boil it?). Red and blue make purple.....
I think Blue cabbage makes more sense!
