Single Batch Canning Is For Me

Today I picked just enough baby cucumbers (a gerkin type) to fill one pint jar. 




Not enough to get out my huge saucepan, fill it up and start boiling about 16litres of water. Instead I got my tall, narrow saucepan out and did enough for one! I already had the vinegar mix ready so I managed to do it while we ate lunch.

Yes, it doesnt add much to our larder, but it will add up over time if I can keep doing this, slowly and steadily. 

Anyone else can one jar at a time? I think this is really going to work for me!

  1. I have no desire to spend a hot day in a hot kitchen, so yeah, I'd say this is a great solution. Those jars will add up in no time!

  2. Thank you! I do this too. I use small tall pots for small batches. It doesn't seem like much at the time, but it all adds up!

  3. i love doing small batch canning. i never make one jar but i make 4 or 6. it's so simple that i think if people approached it this way, more people would can. i also like that fact that you can use different recipes each time so you don't end up with 30 of the same thing!

    1. We agree with jaz - small batches and more variation. And it doesn't really take much special equipment (the jars and seals), nor does it require industrial planning and preparation (and cleaning up afterwards). My Mum used to bottle 150 x 2pint jars of apricots every year and it took the best part of a week of full time work.

    2. Yeah, I never do big batches (except jam) but this way will be good for me as I can use the harvest as it comes in.

  4. Please would you do a little tutorial post.. amounts, seasonings, timings etc. I've made tons of jam and chutney but never canned veggies.

  5. I have done small and large batches. Our raspberries are coming on now, and I'm faced with either small batches or freeze what we can't eat fresh and make jam later.

    1. Yeah, I often do that as well. Build it up and have a big session of preserving. I love drying raspberries, so good in cakes and cookies!
