Harvesting Chillies

I just love the colours of the chillies I've been harvesting lately. The harvest hasn't been as big as I hoped but nothing as done as well in the greenhouse this year. The cayennes have been great on my pizzas for the  last few months though! 
I'm thinking about drying most of these as I haven't got enough to pickle this year. Although I am tempted to make some spicy chutney if anyone has a good recipe for me to try? 
How does everyone else preserve their chilli harvest? I also like the idea I saw on Jamie Oliver where he keeps some in the freezer and just grates it on his food!

  1. kev - if you like hot pickled peppers i have a recipe for refrigerator hot pickled peppers i can share. but if you like the idea of just grating a bit on your food as you like, then freeze them and follow oliver's way of doing that. i will check back if you are interested in the pickled pepper recipe...it's pretty easy.

  2. I am woefully ignorant as far as cooking with and/or using hot peppers. I know they are good for us though so I really should try to learn more. If you don't have enough to make a pickled batch, you could try fermenting a jar or two and holding them in the refrigerator until eaten.

  3. I dry mine by hanging them above the wood burner then wizz them into Chilli Flakes. My problem this year is that I still have loads left from last year; so what to do. I shall be revisiting to see if anyone has any good suggestions.

  6. We get through lots of chillies so this year I simply froze lots. Layer them out of a baking tray to freeze individually before bagging them up.

  7. Last year I left one chilies plant without water once they had turned red, the plant and the chilies dried out and they were so lovely, going to try it again this year.

  8. i had tons of peppers this year. i dried a lot and ended up throwing lots out. i'm not planting as many next year!

  9. I dry a lot of jalapenos every year. Re hydrating to use in so many things or tossing them into so many things.

    One thing when you re hydrate vegetables.. say you are re hydrating onions and peppers... if your not using the water but just the veggies.. save that juice!!! Talk about a awesome veggie stock for soups and stews, chili etc... mmm its good...

    I have a recipe for jalapeno jelly but any hot pepper would work ... its awesome!! I get request from family every year for it as their Christmas gift! Let me know if you think you would like it.
