Tomato Tarte Tatin

We've so many tomatoes at the moment it's tricky to know what to do with them all.
One of our favourite meals with them is this tarte tatin.
Simply fill a roasting dish with cherry tomatoes, a good glug of balsamic vinegar and olive oil, some chopped up rosemary and thyme. Then roll out the puff pastry to fit the dish then spread pesto over it and place it face down on the dish. Tuck in the edges and roast for about 30 minutes until the pastry is cooked and golden.
This is a lovely easy dish served with some other summer veg and new potatoes. 
Also if it's all home grown it works out to be very cheap as well!

  2. Never heard of tarte tatin, Kev. It looks good. We often make our own pizza and base with tomatoes. I add curry paste to the topping to make my own Indian/Italian pizza. You can't beat home grown can you?

    1. We do a beetroot one as well which is great. We've never had an apple one which is where it originates from! Must try one this autumn!

  4. We tried the courgette salad the other day.Obviously I used homemade faux feta,instead of milk feta,but HOLY MOLY...that was delish! Thanks...it will be a firm favourite.

    2. Marinate tofu in red wine vinegar,herbs and olive oil.It doesn't have the sour bite of real feta...but we like it.

  7. I'll have a go at this Kev. we have plenty of tomatoes too, but I am processing quite a few into paste and passata for the freezer as well as eating them at nearly every meal and selling a few from the door. You can't have too many tomatoes!

  8. Looks delicious. When I lived in Italy I practically subsisted on tomatoes, fresh bread, and "buffalo" cheese. I love any tomato dish.
