Cold Courgette Salad

Or Zucchini to the Americans!
I've been loving this salad lately, it's my new favourite and a great way to use up a few courgettes!
It's really simple, use a vegetable speed peeler to create thin strips of courgette, then add a salad dressing of 2/3 olive oil to 1/3 lemon juice (from a lemon not a bottle as it tastes so much better), chuck a bit of feta cheese and a handful of mint leaves in and mix it up. 
I couldn't believe how good this tasted. An easy summer salad!

  1. Not got any courgettes yet! Well apart from 2 my Niece gave me yesterday.
    I picked a lot of Nasturtium seeds yesterday to pickle them like you did, (mock capers) was it last year? just got to find the recipe now!

    1. The only change I'd make is maybe use a milder vinegar like white wine. Every leafy salad we've had has been fun of nasturtium flowers lately!

  2. That looks good and I love feta, so got to try it. I have a sign out with courgettes,blackberries and tomatoes for sale at the mo. If they dont' sell today I shall make that salad tonight.

  5. This sounds very good, simple and easy.. Cant beat that. I bet the mint adds a nice touch to this. I just planted two kinds of Zucchini seeds a couple days ago. I have never tried planting them for a fall crop before, had read here where we live it can be done so I am giving it a whirl.

  6. Kev, thanks for the heads up! Looks yummy. I didn't plant zucchini, but I did plant another variety called Zuchetta. Tastier than zucchini!
